Nyagishiru brings a smooth, honeyed sweetness with vibrant notes of wild strawberry and a touch of dark chocolate, while its honey process adds body and maintains a clean, bright acidity. Jairo Arcila's Castillo variety, with its 72-hour dry anaerobic fermentation, where lychee and wine yeast infuse the cherries, adds delicate, fruity flavors.
